Vietnamese noodle salad with grilled pork chops from @thewoksoflife is the perfect dinner in a steaming hot day. Also, it’s a whole dinner in a plate! We stacked it instead of tossing it just to make it dramatic. Also, used a skillet instead of the grill. It was just too hot out! We had friends coming over, so we tried making the noodles ahead of time. We cooked like normal (pour over style), rinsed with cold water, and set aside. We tossed them well with the dressing and they were just fine an hour later! Phew. Did I mention the dressing is easy and awesome? Leftovers are not a problem – just keep the noodles and the dressing separate and toss them together to eat.
We rounded it out with a melon salad and boom! Refreshing, fun Saturday night dinner.
