Appetizers are pretty much the best part of a party. But Pinterest recipes can be amazing or terrible. These winners always work. The best part? Aside from assembling the shrimp-guac bites and warming things up, you can make all of this earlier in the day and pretend you just whipped something up.
Rueben Balls
This recipe is perfect. We don’t tweak it or adjust the seasonings – we just follow the instructions and make a triple batch. I will admit – I use regular Thousand Island. Blackened Shrimp and Guacamole on Cucumber Rounds
Closet Cooking does an amazing Blackened Shrimp Avocado Cucumber Bites dish I crave. I cheat for a party and use premade guacamole. I also broiled the shrimp in the oven. They still tasted fantastic, looked fancy, and came together in a matter of minutes. I keep a bag of frozen shrimp in my freezer – this is a great way to use them.
Russian Roasted Eggplant Dip
The New Baguette posted this gem, and I couldn’t resist. So many people think they dislike eggplant because they’ve had it prepared badly. Who would love a limp, soggy, brown pile on a plate? This, on the other hand, this dip is the jam. Aside from a sprinkling of Penzey’s Tsar Dust, we made it as is, and had no regrets.
Roasted Leek and Asparagus Tart
The Life Jolie cooked this bad boy up. It’s so pretty! And uncomplicated. Now that we’ve made it once, I’d make it ahead unless it’s a main dish, and just warm it before serving. I’d also seaon a bit more. We roasted the veggies instead of pan sauteeing, but otherwise behaved ourselves and followed her instructions.
