Dave cooked. I love that man. Enchiladas for all! His recipe per pan: rotisserie chicken (1 1/2), 3/4 of a tall pack of corn tortillas, 5 or so packages of red or green Frontera enchilada sauce, a thorough dousing of cheese on top. He also throws in a giant can of green chiles and two small cans of black olives. He doesn’t roll – just layers like lasagna. Then it cooks at 400 F for 40 minutes or so (30 of those covered with tin foil), and we eat! Top with sour cream, guacamole, an egg, or nothing.
